Happenings

July 25th – August 1st, 2018

Hello friends!! Join us every Wednesday for the events not to miss in the coming weeks.  While our google calendar is great, sometimes events can get lost in the sauce.  So here are some events we are excited for in the coming week!!

Toli Moli x Duende District Present: COOK + BOOK “Chicken Adobo & Sauces!”
Who: Toli Moli x Duende District
What: Toli Moli x Duende District present: COOK + BOOK, a friendly gathering on the last Wednesday of each month to learn more about cooking with Asian ingredients at home.
On July 25th, our summer partnership continues with Foodhini, founded on the idea that food can be used to create new opportunities for our immigrant and refugee communities by preparing and delivering authentic multicultural meals. The seventh monthly edition of COOK + BOOK returns to Union Market with a Chicken Adobo & Sauces Galore cooking class.
What is Chicken Adobo? For those who don’t know this delightful culinary staple, it’s one of the most well known Filipino dishes and one of Chef Wing’s specialties. His recipe introduces the uninitiated to super creamy and tender cuts of chicken breast with a hint of sweetness. Marinated in brown sugar, coconut vinegar, and soy sauce, this is bound to be a favorite in your household if it isn’t already. Enjoy fresh cut chunks of potatoes slow cooked and marinaded with a sweet and savory sauce. Special treat: Chef Wing is preparing three additional homemade Filipino marinades/sauces for you to try – check your bodega bag after class!
Who is Chef Wing? Born and raised in the Philippines, Chef Wing has been in the U.S. for a little over four years. He started his culinary journey as a young boy when he and his mother would cook meals out of their home kitchen to sell to other families in their village. From breakfast to dinner, Wing would whip up homemade Palawan food the entire community would line up for. As a teenager, Wing worked 15-hour days as a sous-chef at a local restaurant to help support his six other siblings. Eventually, Wing moved to the city and started his own boat tour company where he cooked local favorites for his guests, one of whom would later become his wife.
When Wing and his wife moved to the States, his dream was to follow in his mother’s footsteps to open a restaurant. Wing’s humble beginnings in the restaurant industry were as a dishwasher at the Natural History Museum. There, he worked his way up to positions as a line cook at restaurants throughout DC. As three immigrant-owned businesses, we are honored to be part of Chef Wing’s journey in achieving his dream of opening his own Filipino toro toro style restaurant someday, all while being able to bring you the flavors and tastes of his home Palawan food.
After class, chat with Chef Wing and Team Toli Moli about what ingredients at Toli Moli’s Burmese Bodega you can use for home cooking. Following the demonstration, thanks to a partnership with Harvey’s Market, Almaala Farms and Toli Moli, you’ll also get a “bodega bag” filled with ingredients to make your own Filipino meal at home!
This month’s featured book available for purchase is Asian American: Proudly Inauthentic Recipes from the Philippines to Brooklyn by Dale Talde, Top Chef favorite and owner of the acclaimed Brooklyn restaurant Talde. Today, his dual identity is etched on the menu at Talde, where he reimagines iconic Asian dishes, imbuing them with Americana while doubling down on the culinary fireworks that made them so popular in the first place. His food isn’t Asian fusion; it’s Asian-American.
Each month at COOK + BOOK, you’ll have the opportunity to:
purchase a book written or recommended by the chef
enjoy dynamic conversations with local food entrepreneurs
take home a “bodega bag” with key ingredients from class
meet new friends interested in Asian food and cultures
learn a new recipe using Asian ingredients from Toli Moli’s Burmese Bodega and other Union Market businesses
In collaboration with Union Market.

Building the Basics
Who: DM202Live
What: For this session of DM202Live, we will be taking it back to the beginning and talking about building the basics. As creatives and businesses in general, there are three tools that you need to get started when building. We are going to talk about building a website, building a contract and building a media kit. With these three things you can tell your story, protect yourself and sell your brand or product. By the end of this session you will know how to get start either building these tools on your own or what you need to know to ensure that you are getting exactly what you are looking for. Learn what to ask and what professionals should be asking you to ensure that you have the outcome that you desire. For this session we will be hearing from Ashlee Hightower of Contracts for Creatives, an attorney who specializes in creating contracts for creative entrepreneurs and small business owners; Tabetha Zimmerman of AuCu Strategies & SteamDC on building a website; and Diego Gonzalez-Zuniga of Diego Downtown, on building a compelling media kit. Whether you are a long time creative looking to get a refresh or expand your toolkit or a new creative looking for where to start, we will give you the tools you need to continue to succeed. Our Presenters: Ashlee Hightower: After graduating from Ole Miss and then Cumberland School of Law at Samford University and passing the bar exam, Ashlee practiced law for over three years at a large, national law firm in Birmingham, Alabama. She then transitioned into a more corporate legal job in Washington, DC at a global publishing company where she worked as a legal editor writing and editing legal articles. While working as a legal editor, to scratch her own creative itch, she launched a style and travel blog, Cobalt Chronicles. As she dove deeper into the blogging world and began to meet creatives in different fields (photographers, graphic designers, event planners etc.), she realized there was a whole in a lot of her peers’ businesses – they weren’t utilizing contracts to protect themselves and their businesses. With her background in the blogging world and her legal expertise, she launched her Contracts for Creatives business, where she helps creative entrepreneurs and small business owners with all of their contract needs! Tabetha Zimmerman: Tabetha left Jacksonville, Florida in order to pursue a degree in Business Administration with a concentration in Information Systems Technology Management and Hospitality Management from George Washington University. While in her accelerated masters program, Tabetha managed teams and focused on UX design, tech automation, and cyber security in order to build secure and efficient business practices. After years in management for boutique hotel chains, Tabetha created her first company that fused her love for nutrition, social justice, and tech automation. Tabethat is a serial entrepreneur focused on creatives of all mediums being fairly paid to increase sciences + art in all communities she touchs with a holistic approach to management, nutrition, marketing, and activism. Her companies include: Golden Pineapple with a core mission is to make the cannabis movement intersectional and accessible to all peoples. Private events, education, consulting, activism; STEAMdc an incubator focused on the monetary evaluation of Sciences, Tech, Engineering, Art, and Medicine inspired by the rise and emphasis on training in these disciplines; and AuCu Strategies a boutique business development firm. Currently, Tabetha manages her first food focused start up and co-founded an incubator that focuses on the business strategies for local innovations in science, technology, engineering, art, and medicine. Diego Gonzalez-Zuniga: You can find Diego Gonzalez-Zuniga at the intersection of fashion and community – an accomplished retail professional turned neighborhood advocate and marketer, he spends what free time he has left documenting his (very stylish) love affair with the place he has called home for the past 5 years – Washington D.C. His blog, Diego Downtown, launched earlier this year to fill what Diego thought was a void in the market – a place for men to find fashion and lifestyle inspiration that felt like the eclectic, curated and homegrown creative community that he lived in. Dedicated to spotlighting local boutiques and makers alongside national brands, Diego’s point of view is always about a sense of discovery and how people truly like to shop – high and low, at the mall and on Main Street. His hope is that one day D.C. will be known not only as a city with government and political influence but also as one of notable style as well. Named as one of the “Best Instagram Accounts to Follow” by Washingtonian magazine in 2016, Diego has also recently been featured by Complex Magazine, DC Refined, Made In The District and Fashionista Street Style. He is also regular contributor on several local television networks as a local style expert and is an active member of the DC chapter of The Fashion Group International, where he works to advocate for local brands, makers, and emerging designers. Look forward to meeting and learning with you on the 26th.
